I am having some trouble about which proccess’ and in which order to use them in order to get an excel file out of my .jpg. I tried a couple of different alternatives but none of them turned to workout.
I can run layout recogniser followed by table exporter, the results turn out to be very good but I have no idea of how to collect all the xlsx files.

You used the right workers. However, you need to do two separate processes here.
The first worker will create the tables used by the second one. You will need to filter by element type.
The processed tables will be exported and available as task artifacts. To make the download easier, they will be zipped in a single archive. You can download it by clicking on the name of the task, namely table-exporter_xxxx, and then expanding the Artifacts menu. See my screenshot above.
